Winter Squash

For a change of pace, instead of adding sweetness to winter squash, one of my favorite ways to prepare it is to simply peel and cut up the squash into one-inch pieces. Then toss with olive oil, minced garlic, fresh parsley, salt and freshly ground pepper.


Place in a small roasting pan and sprinkle with freshly-grated Parmesan cheese. Roast in a 400 degree oven for about an hour, or until squash is tender.


Enjoy when you can, and endure when you must ~ Goeth

WOW!! That looks good!!! Everything doesn't need sweetness (did I just say that!!) roasting brings out the best flavors!

Hey, I stumbled across your blog a few weeks ago when I was doing a search for either Cityfresh or Blue Pike Farm. I am a fellow Clevelander and Cityfresh shopper (I go to the stop in Slavic Village).
Thanks for this recipe. I prefer the 'sweet' veggies (sweet potatoes, squash, etc.) not made sweet with sugar and all that. I prefer to make them in savory dishes- like sweet potato fries with salt and parmesan cheese. I have a few squash (from Cityfresh) to use up- acorn and butternut- and look forward to trying this recipe out.

I'm another one who likes winter squash with a savory flair. I always prefer yams with just butter, salt, & pepper. I've got a nice butternut squash just begging for this particular treatment.
