Peach Galette

A Galette is a rustic, flat round pastry with a baked fruit topping.

Peach Galette

Recipe

Pastry:

2 cup all-purpose flour
2 tsp. sugar
1/2 tsp. salt
1/2 cup + 2Tbsp. butter, cut up
1 egg, beaten

1/4 cup Orange Marmalade
2 tsp. water

Fruit topping:

4 peaches, sliced
4 Tbsp. butter, melted
Sugar

Combine dry ingredients, cut in butter until coarse and crumbly. Add egg and mix just until dough comes together into a ball. Wrap in plastic wrap and refrigerate for about 30 minutes. Divide dough in half and roll out on a floured board into 9-inch circles.

Combine marmalade and water, brush a small amount lightly over bottoms of dough. Set aside remainder.

Arrange peaches over dough, overlapping in a flower pattern, fill center of flower with blueberries. Fold over edges of dough. Baste peaches with melted butter and sprinkle with sugar.

Bake in a preheated 425 degree oven for 10 minutes, lower heat to 350 degrees and bake an additional 30 minutes or until crust is golden brown. Brush remainder of marmalade over fruit.

I have done a similar thing with apples. I've been buying peaches and now I know what I am going to do with some. It probably doesn't have as many calories as a regular pie...not having two crusts. I like the addition of the marmalade.Your pictures are great!

This is a very easy dessert to do, you could use ready-made crust and get the same effect :)

Yeah! I see the galette! And it is indeed yummy looking. You know I'm a sucker for fresh peaches, and fruit pies are my favorite desserts. However, I'm afraid of pie crust, so I never make home made pies.

The galette is so rustic, though. Perhaps even I could manage its crust. (Yes, I understand the irony. How could someone like me who has been making baklava, spankopita, and other fillo-based dishes all my life be afraid of pie crust? But it's true!)

I love the addition of orange marmalade too. I think that's a perfect combo.

LOL .. I, who have never attempted baklava is giggling just a little. As I told Lucy, I have never mastered the "pretty" crusts, but mine are tasty :) Thanks for the compliments.

Linda, forgive my ignorance. Do you add any liquid to the pie crust or is the egg sufficient?

Just the egg Sue .. "if" it seems too dry, you could add a Tbsp. of water or two, but I did not. I like this crust so much, I could eat it alone :)

My favorite desserts are rustic and this sure fits the bill. The fact that it is made with peaches makes it that much better. Lucky you for having coolish weather.
