Summer breeze...

Memories of summer breezes will blow through my kitchen this winter, with the bounty of produce that I put up every year. Roasted tomatoes and red peppers, green peppers, corn, ,zucchini (grated), blueberries and peaches and freezer jams. Still to be added, homemade pasta sauce and winter squashes. Fresh herbs are dried and stored in jars. I brought in my parsley and thyme from my little rooftop garden and they are thriving on the windowsill under the fluorescent light my food critic bought for me, along with a pot of leaf lettuce.

So what have you canned and/or frozen from your farmers markets/gardens to enjoy this winter?

I put up some Caramel Apple Butter a few weeks ago, but I'm about to go warp speed on canning. I have a friend at work who wants to "order" some of my goodies.

Some of my seasonal favs are:
- Cranapple relish
- Caramel apple butter
- Roasted red pepper spread
- Salsa (tomato and peach)
- Caramelized red onion relish
- Apple pie jam
- Ginger peach jam
- Habanero gold jelly
- Madras pickled eggplant (for my curry-loving friends)

So many goodies...so little time.

You've inspired me to store fresh produce next year when I have a designated veggie and possibly herb garden.

OMG Kathy ... all those sound wonderful, I said I would learn to can this year but life gets in the way, next year I promise :) Caramel apple butter? Yummy!

Lucy, definitely more maters and peppers will be in my garden next year, as well as the garlic I am planting next month.

Darius ... I haven't canned yet either, but I do put up in the freezer. Just think when all those maters and peppers are not only commanding high prices in the dead of winter but where they come from ?

Bee, thank you. I start storing as soon as the veggies come into season. I call it my half-n-half system. Half of all produce bought at the farmers market is designated for the freezer.

You've done quite a lot. Congratulations! I don't know what happened to me this summer. So far I've only managed to freeze a bunch of basil and cilantro leaves. Earlier I dried quite a bit of my home grown Greek oregano. But that's about it. I'm glad you had more motivation than I did.

My motivation is two-pronged, the taste of locally grown produce is superior to the stuff shipped in from out of the country, and then there is the economics of it all.

i'll be singing that song in my head all day, and i'm glad. :)
oh, and my freezer mostly contains corn, blueberries, raspberries, and blackberries. it's a small freezer. :)

Theresa..if I can put out a couple of pots on my roof, I know you can one-up me :) At least pot up some maters.

Grace..way back in the day before there were CDs/DVds I wore out an 8-track tape playing that song :)

My freezer is just the upper part of my fridge, I forsake storing meat to store my veggies :)
