Tomato-Anchovy

The Equal Opportunity Kitchen is hosting this month's Presto Pasta Nights. Thanks go to my friend Lucy over at Sweets, Savories, Etc. for the inspiration in the creation of this Tomato-Anchovy Sauce. When I was at the Coit Road Farmers Market this past Saturday Lynette gave me a large bag of assorted tomatoes, roma, yellow grape, yellow plum and others. I roasted them with the idea of making this sauce. The food critic loved it!

Tomato-Anchovy Pasta

1/4 cup olive oil
1 onion, chopped
4 cloves garlic, minced
1-2 oz. tin anchovy fillets, drained and chopped
Roasted tomatoes
1/2 cup fresh parsley, chopped
Freshly ground black pepper
Grated Asiago cheese

Sautee onion in a deep skillet over medium heat until carmelized. Add garlic and cook for about 2 minutes. Add the anchovies and roasted tomatoes. Cover and simmer about 20 minutes. Stir in parsley and serve over cooked pasta. Season with freshly ground black pepper and cheese to taste.

So simple and so delicious looking...the roasted tomatoes get me each time.

A little anchovy with tomato is a nice combo too.

Gotta give this a whirl...never tried anchovies in my pasta sauce before and I bet it is good. I usually add some to my tepenade when I make it, so it's gotta be good here.

Wonder if I can add some to a jar of my homemade Chunky Basil Pasta sauce? Hmmmmmmm...

I never tried anchovies in my tomato sauce before. I'll remember that for next time and yet so simple too. Glad the food critic approved!

All the credit for the anchovies in the pasta sauce belongs to Lucy, and she was right it ads a definite pop to the sauce, and after the food critic raved about the taste, I let him in on Lucy's secret :)

Ooooh my secret is out!!! Well not really a secret, I'm so glad to hear that you gave it a try & added the anchovies, they really do add a wonderful punch... simply because it's not that anchovy they've had on a pizza, completely different tasting!!

I'm so glad that Mr. Food Critic enjoyed as well as yourself ; )

LOL Lucy, the food critic kept raving how good my sauce was, so I told him your "secret" ingredient. They definitely add that extra something :)

That looks awesome. I don't know how I feel about the anchovies. I'm prejudice against them even though I've never eaten or tasted one.

Looks tasty though.

i'm not really sure why anchovies make me squeamish--after all, i crave salt--but they do. i really need to get past that, because your sauce looks and sounds pretty durn incredible. :)
